Biscuit Topping

Sausage Gravy

Main Ingredients

Method

Biscuit Topping

  1. 1

    Prepare the Biscuit Dough

Preheat your oven to 425°F (220°C). In a large bowl, combine flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in milk until just combined.

  2. 2

    Shape and Bake Biscuits

Turn the dough onto a floured surface, knead gently 5-6 times, then roll to about 1-inch thick. Cut out biscuits with a biscuit cutter or a glass. Place them on a baking sheet and bake for 12-15 minutes or until golden brown.

Sausage Gravy

  1. 3

    Cook the Sausage

In a large skillet, cook the sausage over medium heat until browned and crumbled, about 5-7 minutes. Drain excess fat if necessary.

  2. 4

    Make the Gravy

Sprinkle the flour over the cooked sausage and stir to combine. Gradually whisk in the milk, stirring constantly until thickened. Season with black pepper and salt, then reduce heat to low to keep warm.

Main Assembly

  1. 5

    Cook the Eggs

In a non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but yolks are still runny, about 2-3 minutes for over-easy eggs.

  2. 6

    Blister the Tomatoes

In a separate skillet, heat olive oil over medium-high heat. Add the cherry tomatoes and cook until they blister and burst, about 5 minutes. Season with salt and pepper to taste.

  3. 7

    Assemble the Dish

To serve, place a biscuit on a plate, top with a slice of local ham, a cooked egg, and generously ladle sausage gravy over the top. Serve blistered tomatoes on the side with fresh fruit.
