Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). This ensures that your cake bakes properly and achieves that lava-like center.

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and lightly dust with flour to prevent sticking. Set aside.

  3. 3

    Melt Butter and Chocolate

In a microwave-safe bowl, combine the unsalted butter and bittersweet chocolate. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  4. 4

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until well combined and frothy.

  5. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously to combine. This prevents the eggs from cooking due to the heat of the chocolate.

  6. 6

    Add Remaining Ingredients

Fold in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Be careful not to overmix.

  7. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  8. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  9. 9

    Cool and Serve

Remove from the oven and let cool for 1 minute. Carefully run a knife around the edges to loosen the cakes, then invert onto plates. Serve immediately with a scoop of vanilla ice cream.
