Fondant Preparation

    Preheat the Oven

    Preheat your oven to 200°C (392°F) and prepare four ramekins by greasing them with butter and dusting with flour.

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

    Mix Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar and eggs until the mixture is pale and fluffy.

    Combine Mixtures

    Gradually fold the melted chocolate mixture into the egg and sugar mixture until well combined.

    Add Flour and Vanilla

    Sift the all-purpose flour into the batter and add the vanilla extract. Gently fold until just incorporated.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Bake in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft and gooey.

    Cool Slightly

    Remove from the oven and let the fondants cool for 1-2 minutes before inverting them onto plates.

Vanilla Ice Cream Preparation

    Prepare Ice Cream Base

    In a saucepan, combine heavy cream, whole milk, and granulated sugar. Split the vanilla bean lengthwise and scrape out the seeds into the mixture. Add the bean pod as well.

    Heat the Mixture

    Heat the mixture over medium heat until it begins to steam, but do not boil.

    Whisk Egg Yolks

    In a bowl, whisk the egg yolks until they are pale and thick.

    Temper the Egg Yolks

    Slowly pour a small amount of the hot cream mixture into the egg yolks, whisking constantly. Then pour the tempered egg yolks back into the saucepan.

    Thicken the Custard

    Cook on low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Chill the Custard

    Remove from heat, strain through a fine-mesh sieve into a bowl, and let it cool completely. Refrigerate for at least 4 hours or overnight.

    Churn Ice Cream

    Churn the chilled custard in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the ice cream to a container and freeze until solid, about 4 hours.
