Prepare Oysters

Shuck oysters

Rinse oysters under cold running water to remove grit. Place an oyster flat-side up on a towel. Using an oyster knife, insert tip at hinge, twist to pop open, run knife under top shell to sever muscle and remove top shell. Loosen oyster from bottom shell but leave oyster in shell with its liquor. Repeat for all oysters and keep them chilled on ice.

Preheat oven to 450°F (232°C). Spread the crushed rock or coarse kosher salt in an even layer on a large rimmed baking sheet to create a stable baking bed for the oyster shells.

Make Rockefeller Topping

Cook aromatics

In a large skillet over medium heat, melt 4 tbs butter. Add the minced shallots and cook, stirring, until translucent and soft, about 3 minutes. Add the minced garlic and cook 30 seconds until fragrant.

Wilt greens

Add the chopped spinach and optional baby kale or escarole to the skillet. Cook, stirring, until wilted and any liquid released has mostly evaporated, about 3–5 minutes. If greens produced excess liquid, increase heat briefly and cook until nearly dry. Transfer cooked greens to a cutting board and finely chop once slightly cooled.

Combine topping

Return skillet to low heat and add remaining 2 tbs butter. Add the chopped wilted greens, chopped parsley, chives, chopped anchovies (or anchovy paste), Worcestershire sauce, heavy cream, lemon zest, Tabasco, salt and pepper. Stir to combine and heat through gently for 1–2 minutes. Stir in the dry breadcrumbs and grated Parmesan to bind the mixture; remove from heat.

Taste the topping and adjust seasoning: add a pinch more salt, squeeze of lemon, or a dash more hot sauce if desired. The mixture should be flavorful and slightly creamy but not soupy.

Assemble & Bake

Plate oysters on salt bed

Mound the prepared salt on the baking sheet so each oyster sits level. Place oysters, one per shell, on the salt bed. If any oyster has excess liquid, gently spoon out a little but leave enough liquor to keep flavor.

Top oysters

Using a small spoon, place about 1 heaping tablespoon of the Rockefeller topping onto each oyster, spreading it to cover the meat but not overflowing excessively. Drizzle or brush a small amount of the melted butter over each topped oyster (about 1/8 tbs each).

Bake

Bake in the preheated 450°F (232°C) oven until topping is bubbling and lightly browned, about 8–10 minutes. For a browned crumb finish, switch to broil on high for 1–2 minutes—watch closely to prevent burning.

Finish & Serve

Remove oysters from oven and let rest 1 minute. Sprinkle each oyster with a pinch of chopped parsley and a small squeeze of fresh lemon just before serving.

Serve oysters hot on the salt-lined baking sheet or transferred to a warmed platter. Provide lemon wedges at the table.
