    Prepare the Vegetables

    Dice the bell pepper and red onion. Set aside.

    Season the Chicken

    In a bowl, combine the shredded chicken with cumin, chili powder, salt, and black pepper. Mix well to evenly coat the chicken.

    Sauté the Vegetables

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced bell pepper and red onion, and sauté for about 5-7 minutes until they are soft and fragrant.

    Combine Chicken and Vegetables

    Add the seasoned shredded chicken to the skillet with the sautéed vegetables. Cook for an additional 3-4 minutes, stirring frequently until heated through. Remove from heat.

    Assemble the Quesadilla

    Heat another tablespoon of olive oil in a separate large skillet over medium heat. Place one tortilla in the skillet, sprinkle 1/2 cup of shredded cheese evenly on top, then add half of the chicken and vegetable mixture. Top with another 1/2 cup of shredded cheese and cover with a second tortilla.

    Cook the Quesadilla

    Cook for about 3-4 minutes on one side until the bottom is golden brown. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden brown and the cheese is melted. Remove from skillet and repeat with the remaining ingredients.

    Cut the quesadillas into wedges and serve hot with sour cream, guacamole, and chopped cilantro on the side.
