Making the Cheese Curds

    Heat the Milk

    In a large pot, pour the whole milk and heat it gently over medium heat until it reaches 185°F (85°C). Stir occasionally to prevent scorching.

    Add Vinegar

    Once the milk has reached the desired temperature, remove it from the heat and slowly stir in the white vinegar. The milk will begin to curdle, forming curds and whey.

    Let it Sit

    Allow the mixture to sit undisturbed for about 5-10 minutes to let the curds fully form.

    Strain the Curds

    Line a colander with cheesecloth and pour the curdled mixture into it. Let it drain for about 5 minutes to remove excess whey.

    Mix in Salt and Rennet

    Transfer the curds to a bowl, sprinkle with salt, and dissolve the rennet in 1 cup of water. Pour the rennet solution over the curds and gently mix to combine.

    Knead the Curds

    Knead the curds gently with your hands until they are smooth and elastic, about 5-10 minutes.

    Shape the Curds

    Shape the curds into small balls or chunks, depending on your preference.

    Add Optional Seasonings

    If desired, sprinkle garlic powder, dried oregano, and cayenne pepper over the curds and toss to coat evenly.

    Place the cheese curds in the refrigerator to chill for at least an hour before serving. Enjoy as a snack or with your favorite dipping sauce!
