Cooking Instructions

  1. 1

    Prepare the Vegetables

Chop the tomato and red onion, and wash the spinach thoroughly. Set aside.

  2. 2

    Whisk the Eggs

In a bowl, whisk together the eggs, salt, and black pepper until well combined.

  3. 3

    Cook the Vegetables

Heat olive oil in a non-stick skillet over medium heat. Add the chopped red onion and sauté for about 2 minutes until translucent. Then add the spinach and tomato, cooking until the spinach is wilted.

  4. 4

    Add the Eggs

Pour the whisked eggs over the cooked vegetables in the skillet. Allow it to cook undisturbed for about 3-4 minutes, or until the edges start to lift.

  5. 5

    Add Feta Cheese

Sprinkle crumbled feta cheese over the top of the omelet. Cover the skillet with a lid and cook for another 2-3 minutes until the eggs are fully set.

  6. 6

    Serve

Gently slide the omelet onto a plate, garnish with fresh parsley, and serve hot.
