    In a saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Reduce heat and simmer for 15-20 minutes, stirring occasionally, until thickened. Stir in 2 tablespoons of butter and set aside.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove bacon from the skillet and place on paper towels to drain. Reserve some of the bacon grease in the skillet for cooking the eggs.

    In the same skillet with the reserved bacon grease, crack 4 eggs and cook them sunny-side up or to your desired doneness. Season with black pepper.

    Spoon the grits onto plates, top with crispy bacon, and place the eggs on top. Sprinkle with shredded cheddar cheese and chopped chives for garnish.
