Classic River City-Style Cheeseburger

Form the patties
Divide the 1 lb ground beef into 4 equal portions (about 4 oz each). Gently form each portion into a loose patty about 3 to 3.5 inches in diameter and roughly 3/4 inch thick. Do not overwork the meat; that makes burgers tough. Make a shallow dimple in the center of each patty with your thumb to prevent puffing while cooking.

Season
Lightly brush or sprinkle both sides of each patty with salt (about 1/4 tsp per side) and a pinch of black pepper. Sprinkle a small amount of Worcestershire sauce on top of each patty (about 1/4 tsp each) and spread gently.

Preheat grill or skillet
If using a grill, preheat to medium-high (about 400°F / 200°C). If using a heavy skillet or cast-iron pan, heat over medium-high and add 1 tablespoon vegetable oil to coat the surface.

Cook patties
Place patties on the hot grill or skillet. Cook for 3 to 4 minutes on the first side without pressing them. Flip once and cook another 2.5 to 3.5 minutes for medium doneness. For fully cooked (kids preference), cook 4 minutes per side. When you have about 1 minute left on the second side, place an American cheese slice on each patty and cover (grill lid or skillet lid) to melt.

Assemble burgers
Spread about 1 tablespoon mayonnaise on the bottom bun, add a small handful of shredded lettuce, place the cheeseburger patty, then top with 2 tomato slices, 2–3 pickle slices, a few rings of red onion (optional), 1 teaspoon mustard, and 1 teaspoon ketchup (or allow kids to add condiments themselves). Top with the bun crown and serve immediately.

Season and oil
Drain and thoroughly dry the potatoes with a clean kitchen towel or paper towels. In a large bowl, toss potatoes with 2 tablespoons olive oil, 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper until evenly coated.

Bake
Arrange fries in a single layer on a baking sheet lined with parchment or lightly oiled (use two sheets if needed so fries aren’t crowded). Bake for 20 minutes, then flip fries and bake another 12–15 minutes until golden and crisp at the edges. If using shredded cheddar as an option, sprinkle it on top during the last 2 minutes of baking to melt.

Serve
Remove fries from oven, taste and adjust salt if needed. Serve hot with ketchup, ranch, or preferred dipping sauce.
Optional Kid-Friendly Add-ins & Tips

If your kids prefer no onions or pickles, skip those toppings. For a simpler 'cheeseburger kid' serve patties on buns with just cheese and ketchup. To make turkey or veggie burgers instead, substitute ground turkey or a pre-made veggie patty and adjust cooking times per package. Leftover patties can be refrigerated up to 3 days.
