Preheat and prep
Preheat your waffle iron according to manufacturer instructions to medium-high heat. Lightly grease the iron with oil or nonstick spray.

Combine dry ingredients
In a large bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon unsweetened cocoa powder, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon fine salt until evenly combined.

Mix wet ingredients
In a separate bowl or large measuring cup, whisk 1 1/2 cups buttermilk with 2 large eggs until smooth. Add 1/4 cup melted and cooled unsalted butter, 1 tablespoon vegetable oil, 1 teaspoon vanilla extract, 1 teaspoon distilled white vinegar, and 2 tablespoons red food coloring. Whisk until uniform in color.

Combine wet and dry
Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula until just combined; the batter should be slightly lumpy but without large streaks of flour. Avoid overmixing to keep waffles tender.

Rest batter briefly
Let the batter rest for 5 minutes at room temperature. This allows baking powder and soda to activate and the batter to hydrate for a lighter waffle.

Cook waffles
Scoop batter into the preheated waffle iron (amount will depend on your iron — usually 1/2 to 3/4 cup). Close the lid and cook according to your waffle iron's directions until steam subsides and waffles are crisp on the edges, about 4–6 minutes. Carefully remove and transfer to a wire rack set over a baking sheet to keep crisp while you cook remaining batter. Repeat until all batter is used, greasing the iron as needed.

Beat cream cheese
While waffles cook, place 4 oz softened cream cheese in a medium bowl and beat with a whisk or hand mixer until smooth and lump-free.

Adjust sweetness/consistency
Taste and adjust sweetness or salt if needed. Keep glaze at room temperature; if it firms up, whisk in a little milk to loosen before serving.
To Serve / Garnish

Warm butter and syrup
Warm 2 tablespoons butter and 1/2 cup maple syrup gently in a small saucepan or microwave until pourable. Keep warm.

Place 1–2 red velvet waffles per serving on plates. Drizzle with warm maple syrup and a generous spoonful of cream cheese glaze. Top with fresh strawberries or mixed berries if using. Dust lightly with powdered sugar for a finishing touch.
