Wicked Tuna — Prepare the Grouper (Sushi-Style)

Assess & clean
If the grouper was kept chilled and smells fresh (clean sea scent, not fishy), proceed. Pat the fillet dry with paper towels. Remove any remaining pin bones with tweezers and, if present, leave skin on for a light sear or remove for nigiri-style slices. Keep fish refrigerated until ready to slice.

Light cure
Mix kosher salt and 1 tsp granulated sugar. Sprinkle evenly over both sides of the fillet (use about half the mixture on each side). Let sit on a wire rack in the refrigerator for 15 minutes to gently firm the flesh and draw out a little moisture. After 15 minutes, lightly rinse the cure under cold water and pat dry thoroughly.

Vinegar rinse & flavor
Brush both sides of the fillet with rice vinegar (about 2 tablespoons total) to add a touch of acid and help preserve color. Let sit 2 minutes, then pat dry. Zest 1/4 lemon over the fillet and add a few drops of lemon juice if desired.

Slice for sushi
Using a very sharp knife, cut the fillet into sushi slices (sashimi) about 1/4 inch (6 mm) thick and roughly 1 x 3 inches for nigiri pieces. For rolls or sashimi plates, cut to preferred shapes. Arrange slices on a chilled plate, cover loosely with plastic, and keep in the coldest part of your refrigerator while finishing garnishes and desserts (no more than 30–60 minutes total before serving).

Optional quick sear (aburi)
If you prefer an aburi-style edge: heat 1 tsp neutral oil in a heavy skillet over high heat until shimmering. Sear skin side (or edge) for 10–15 seconds to render fat and add flavor, or use a culinary torch to lightly char the surface for 10–20 seconds. Do not overcook—the interior should remain raw. Transfer back to chilled plate.

Season & serve
Drizzle a few drops of toasted sesame oil over slices, sprinkle toasted sesame seeds and thinly sliced scallions. Serve with soy sauce (or ponzu), a dab of wasabi, pickled ginger, microgreens or shiso, and short-grain rice or nori as desired. Provide lemon segments and extra soy/ponzu at the table.

Make tart shell dough (quick)
Preheat oven to 350°F (175°C). In a small bowl, combine 1/2 cup all-purpose flour, 2 tbsp cold cubed butter, 2 tbsp granulated sugar, and 1/4 tsp sea salt. Using your fingertips or a pastry cutter, rub the butter into the flour until pea-sized crumbs form. Add 1 egg yolk and 1/2 tsp cold water if needed; press together to form a small dough. Do not overwork. Press into two small tartlet molds or a mini muffin tin to form even shells about 1/4" thick. Chill 10 minutes.

Prepare chocolate ganache filling
Place 4 oz chopped dark chocolate in a heatproof bowl. Heat 1/2 cup heavy cream until just simmering (do not boil). Pour hot cream over chocolate and let sit 1 minute, then whisk gently until smooth. Stir in 1 tbsp unsalted butter and 1/2 tsp vanilla extract until glossy. Taste and add a pinch of fine sea salt. Spoon the ganache into the cooled tart shells, smoothing the tops. Chill 20–30 minutes to set.

Make crisp accent (puff or phyllo)
If using puff pastry: preheat oven to 400°F (200°C). Roll or cut thawed puff pastry into thin strips or small decorative shapes, brush lightly with a little melted butter or sprinkle with 1 tsp confectioners' sugar, and bake 8–10 minutes until golden and crisp. If using phyllo, brush sheets with little melted butter, stack two layers, cut to size and bake similarly for 6–8 minutes. Cool until crisp.

Assemble dessert plates
Place a chocolate tartlet on each plate. Spoon or arrange 2–3 fresh berries beside the tart; toss berries with 1 tsp honey or simple syrup and a dusting of confectioners' sugar to shine. Add a crisp pastry piece leaning against the tartlet for height. Sprinkle a few flakes of sea salt on the ganache, scatter a few microgreens or a tiny gold leaf for an opulent finish.

Optional ultra-decadent finish
Warm 1 tbsp heavy cream and drizzle over the chocolate tartlet for a molten finish just before serving, or top with a small quenelle of whipped cream if preferred.
Garnish, Timing & Plating

Coordinate timing so the fish is chilled and served within 30–60 minutes of slicing for optimum texture. Desserts can be chilled while preparing the fish; remove tartlets from fridge 5 minutes before serving to take the chill off ganache slightly. Plate seafood first on chilled plates and follow immediately with dessert plates for a warm-to-cold contrast.

Safety note: This recipe assumes the 2-hour-old grouper has been continuously refrigerated and kept at safe temperatures (below 40°F/4°C). If there is any doubt about freshness — off odors, sliminess, or extended time at warm temperatures — do not consume raw. When in doubt, sear the fish briefly on both sides until an opaque edge appears to reduce surface bacteria risk.
