    Trim any excess fat from the chicken thighs and if pieces are large, cut into 3–4 oz pieces or butterfly into even thickness so they cook evenly.

    In a bowl, whisk together buttermilk, 2 tbs hot sauce, 1 tsp kosher salt, 1 tsp black pepper, garlic powder, onion powder, smoked paprika and 1/2 tsp cayenne until smooth.

    Add the chicken to the marinade, press to submerge, cover and refrigerate for at least 2 hours and up to 8 hours. The buttermilk tenderizes and infuses spice.

Breading & Crunch Layers

    Set up a three-station breading area: bowl 1 - flour mixture; bowl 2 - egg wash; bowl 3 - crunchy mixture.

    Prepare flour mixture

    In a shallow dish combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1/2 tsp paprika, 1/4 tsp ground cayenne, 3/4 tsp salt and 1/2 tsp black pepper. Whisk to combine.

    Prepare crunchy coating

    In another shallow bowl or rimmed plate, combine 3/4 cup seasoned breadcrumbs, 3/4 cup lightly crushed panko, 3/4 cup finely crushed tortilla chips, and 1/2 cup crushed cornflakes (if using). Toss gently so the blend is even.

    For an extra adhesion layer, pulse 1/4 of the crunchy mix in a food processor briefly to create a mixture with both very fine and coarse pieces—this increases crunch variety.

    In a medium bowl beat 2 large eggs with 2 tbs whole milk until smooth to make the egg wash.

    Remove chicken from marinade, let excess drip off, then dredge each piece in the flour mixture to coat lightly. Shake off excess.

    Dip floured chicken into the egg wash, allowing excess to drip, then press firmly into the crunchy coating on both sides so the pieces pick up an even, thick crust. For a double-crisp coating, repeat the egg wash and press again into the crunchy mix.

Fry & Finish

    Pour vegetable oil into a deep skillet, Dutch oven or heavy pot to a depth of about 1 inch (enough to shallow fry). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of breading—if it sizzles and browns slowly, oil is ready.

    Working in batches (do not overcrowd), carefully add breaded chicken pieces to the hot oil. Fry until golden brown and cooked through, about 4–6 minutes per side depending on thickness (internal temperature 165°F / 74°C). Adjust heat as needed to keep oil between 325–350°F so crust cooks without burning.

    Use a slotted spoon or tongs to transfer cooked pieces to a wire rack set over a baking sheet to drain. Keep finished pieces in a 200°F (95°C) oven if you need to hold them while finishing remaining batches.

    Make spicy glaze

    In a small saucepan melt 2 tbs butter over low heat. Stir in 2 tbs hot honey (or regular honey) and 1 tbs hot sauce until glossy and combined. Remove from heat.

    Place hot fried chicken in a large bowl, pour the warm spicy glaze over and toss gently to coat each piece evenly. Alternatively, brush glaze onto each piece for a lighter coating.

To Finish & Serve

    Transfer glazed chicken to a serving platter. Garnish with chopped cilantro and optional sliced pickles. Serve with lime wedges on the side for a bright squeeze of citrus.
