Cook bacon

If using bacon: place 3 bacon slices in a cold skillet in a single layer. Turn heat to medium. Cook 4–6 minutes, flipping occasionally, until edges are crisp and bacon is browned to your liking. Transfer to a paper towel–lined plate to drain.

Cook sausage

If using sausage patty: heat a nonstick skillet over medium heat. Add the raw sausage patty and cook 4–5 minutes per side (total 8–10 minutes), pressing gently once, until internal temperature reaches 160°F (71°C) and outside is browned. Transfer to a plate.

Scrambled or fried eggs

Crack 2 large eggs into a small bowl, add 1/2 tsp salt and 1/4 tsp black pepper, then beat until combined. Heat a nonstick skillet over medium-low and add 1 tsp butter. Pour in eggs and let them set for 10–20 seconds, then gently stir or fold with a spatula until softly scrambled and just set, about 1–2 minutes. Alternatively, fry the eggs sunny-side up or over-easy in the butter to preferred doneness. Remove from pan and keep warm.

Toast & assemble

Toast the 2 slices of bread (or split English muffin) to desired doneness. Spread 1 tbs mayonnaise evenly on one slice of toast. Optional: spread remaining 1 tsp butter on the other slice while warm for extra flavor.

Place the cheese slice on the bottom toast while hot so it softens. Add the cooked bacon slices (or sausage patty) on top of the cheese. Top with the cooked eggs.

Add optional tomato slices, lettuce leaf, and a dash of hot sauce if using. Close the sandwich with the top slice of toast. Press gently and, if desired, return to the skillet for 30–60 seconds per side over low heat (buttered side down) to melt cheese and seal sandwich.

Slice sandwich in half and serve immediately.
