Warm tortillas
Warm the 4 flour tortillas briefly so they are pliable: microwave 10–15 seconds covered with a damp paper towel or heat each 20 seconds in a dry skillet over medium heat until soft and flexible.
Spread 1 tablespoon of softened cream cheese in a thin, even layer over the center of each warmed tortilla, leaving a 1-inch border. If using, mix Dijon mustard and hot sauce into the cream cheese before spreading for a tangy base.
Egg mixture
In a medium bowl, crack 6 eggs and add 3 tablespoons milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk until uniformly combined and slightly frothy.
Heat a nonstick skillet over medium heat and add 1 tablespoon butter or oil. When melted and shimmering, pour the egg mixture into the skillet. Let sit for 10–15 seconds, then gently stir with a spatula, pushing cooked edges to the center so the eggs form soft curds. Cook 2–3 minutes until eggs are set but still moist. Remove from heat.
Fillings
Divide the cooked scrambled eggs evenly among the 4 tortillas, placing the eggs in a line down the center of each tortilla on top of the cream cheese layer.
Finish & assemble
Sprinkle each assembled wrap with about 1/2 tablespoon chopped cilantro or parsley if using.
Fold each wrap: fold the short edges slightly inward, then roll tightly from one long side to the other, keeping the filling compact. Place seam-side down.
Slice each wrap in half on the diagonal. Serve immediately with salsa or pico de gallo (about 1/2 cup for 4 wraps) on the side.
