Soup Base

Sweat the aromatics
In a heavy-bottomed pot over medium heat, melt 3 tbs unsalted butter. Add the finely diced onion, carrot, and celery. Cook, stirring occasionally, until the vegetables are softened and the onion is translucent, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds more until fragrant.

Make a roux
Sprinkle the all-purpose flour over the softened vegetables and stir constantly for 1–2 minutes to cook the raw flour flavor but do not let it brown — this will thicken the soup gently.

Add liquids
Gradually whisk in 6 cups of chicken (or vegetable) stock until smooth. Increase heat to bring the pot to a gentle simmer, scraping any browned bits from the bottom. Add the whole milk and 1/2 cup heavy cream. Stir to combine.

Add potatoes and simmer
Add the parboiled, diced baby potatoes to the pot and simmer gently for 10 minutes, until potatoes are tender and beginning to absorb flavors.

Add corn and chicken
Stir in the frozen corn and the cooked shredded chicken (if using). Simmer 4–5 minutes more to heat through and allow flavors to meld.

Season the soup
Add 1.5 tsp sea salt, 1 tsp freshly ground black pepper, 1/2 tsp dried thyme and the bay leaf. Taste after 3–4 minutes of simmering and adjust salt and pepper as needed.

Finish with herbs
Remove the bay leaf. Stir in 2 tbs chopped fresh parsley and reserve 1 tbs for garnish. Fold in 2 tbs thinly sliced fresh chives, reserving some for garnish.

Mount and brighten
Off the heat, whisk in 1 tsp fresh lemon juice and 1 tbs cold diced butter to enrich and give the soup a glossy finish. Taste and adjust seasoning (salt, pepper, or more lemon) as desired.

Serve
Ladle the Signature White Spot Soup into bowls. Sprinkle reserved chopped parsley and chives, and a pinch (about 1/4 tsp) of cracked black pepper over each serving. Serve immediately with crusty bread if desired.
