Method

Beef Patties

    Form patties

    Divide the ground beef into two equal portions (about 8 oz / 225 g each). Gently shape each portion into a patty about 3/4" thick and slightly wider than your buns. Avoid overworking the meat to keep patties tender.

    Season both sides of each patty with kosher salt and freshly ground black pepper. Lightly press a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.

    Heat a cast-iron skillet or griddle over medium-high heat until hot. Add 1 teaspoon vegetable oil and swirl to coat. Place patties on the hot surface and cook without moving for 3–4 minutes to develop a crust.

    Flip patties and immediately add 1 slice of American cheese to each patty. Cook another 3–4 minutes for medium doneness (internal temperature ~160°F / 71°C for well done - adjust time if you prefer). If using a lid, cover briefly to help cheese melt.

Secret Triple 'O' Sauce

    While patties rest, combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, apple cider vinegar, onion powder, garlic powder, smoked paprika, sugar, salt, and freshly ground pepper in a small bowl.

    Whisk until smooth and homogenous. Taste and adjust: add a pinch more sugar for sweetness, a dash more vinegar for tang, or a little more relish for texture. Refrigerate until ready to assemble (can be made up to 2 days ahead).

Assembly & Toppings

    Lightly butter the cut sides of the hamburger buns. Toast them on the skillet or in a separate pan over medium heat until golden, about 1–2 minutes per side.

    Spread about 1 to 1 1/2 tablespoons of the Secret Triple 'O' Sauce on the bottom half of each toasted bun.

    Place a cheese-topped beef patty on each sauced bottom bun. Top each patty with 2 tomato slices, 3 pickle slices, and a small handful (~1/4 cup) of shredded iceberg lettuce. Spoon an additional 1/2 tablespoon of sauce on the top bun (optional) and close the sandwich.

    Serve immediately while hot. Optionally serve with fries or a Pirate Pak-style side.
