    Prepare ingredients

    Remove bread and cheese from refrigerator so they come closer to room temperature (10–15 minutes). If using block cheddar, slice cheese into even 1/8–1/4 inch slices or shred. If using tomato, slice tomatoes into 1/4-inch rounds and pat dry with paper towel.

    Assemble sandwiches

    Lay out 4 slices of bread. If using Dijon, spread approximately 1/4 teaspoon Dijon mustard onto each of those 4 slices. Distribute 2 ounces (about 2–3 slices or a generous 1/2 cup shredded) Canadian cheddar on each of the 4 bread slices. Add 2–3 tomato slices on top of the cheese if using. Top with the remaining 4 bread slices to form 4 sandwiches.

    Butter the bread

    Spread softened unsalted butter evenly on the outside face of each sandwich (both top and bottom) using about 3/4 teaspoon per face so total uses about 3 tablespoons for 4 sandwiches. Alternatively brush the outsides lightly with melted butter or olive oil for a crisp, golden crust.

    Grill the sandwiches

    Heat a heavy skillet or griddle over medium-low to medium heat (about 300–325°F / 150–160°C surface). Place sandwiches in the pan and cook, pressing gently with a spatula or a sandwich press, 3–4 minutes per side until bread is golden brown and cheese is melted. Lower heat if bread browns too quickly before cheese melts. Total grilling time is typically 6–9 minutes per sandwich depending on thickness and heat.

    Finish and season

    Remove sandwiches from the skillet and let rest 1 minute. Slice each sandwich diagonally. Sprinkle a light grind of black pepper to taste if desired. Serve immediately while hot and gooey.

    Make-ahead & reheating

    To make ahead: assemble sandwiches without butter and keep wrapped in plastic in refrigerator up to 24 hours. To reheat, brush both sides with butter and cook in skillet over medium-low heat 3–5 minutes per side until heated through and cheese is melted, or toast in an oven at 375°F (190°C) for 8–10 minutes, flipping halfway.
