    Combine dry ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly distributed.

    Mix wet ingredients

    In a separate bowl or large measuring cup, whisk the buttermilk, egg, melted cooled butter, and vanilla extract until smooth and homogenous.

    Make a well in the center of the dry ingredients and pour the wet ingredients in. Gently fold with a spatula or wooden spoon until just combined. The batter should be slightly lumpy — do not overmix. If the batter seems very thick, add up to 2 tablespoons of additional buttermilk to reach pouring consistency.

    Let the batter rest for 5 minutes while you preheat the skillet. Resting hydrates the flour and helps create fluffy pancakes.

Cook

    Heat a heavy skillet or nonstick pan over medium heat for 3–4 minutes. To test readiness, flick a few drops of water onto the surface — they should sizzle and dance.

    Lightly grease the skillet with the teaspoon of butter or a little oil, wiping away excess with a paper towel so the surface is thinly coated.

    Pour about 1/3 cup of batter per pancake onto the hot skillet, leaving space between pancakes. For four large pancakes that will serve four people, you can pour slightly smaller rounds if desired.

    Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Use a thin spatula to check the underside — it should be golden brown.

    Flip and cook the other side until golden and the pancake is cooked through, about 1–2 minutes more. Transfer to a warm plate and tent loosely with foil while you finish the remaining batter. If the skillet browns too quickly between batches, lower the heat slightly.

Syrup & Serving

    Warm the maple syrup in a small saucepan over low heat or microwave in 20-second bursts until just warm. Do not boil; warming enhances flavor and keeps it pourable.

    Stack two pancakes per person (total four pancakes) on plates. Spoon warm syrup over the stack and serve immediately with optional fresh berries or sliced banana. Offer extra butter or syrup at the table if desired.
