    Form patties

    Divide the ground beef into two equal portions (~8 ounces each). Gently form each portion into a patty about 3.5 to 4 inches in diameter and roughly 3/4 inch thick. Make a shallow 1/2-inch-wide indentation in the center of each patty with your thumb to prevent doming during cooking.

    Season patties

    Lightly brush or sprinkle both sides of each patty with Worcestershire sauce (about 1/2 tbs per patty), then season both sides evenly with kosher salt and freshly ground black pepper.

    Cook patties

    Heat a large cast-iron skillet or griddle over medium-high heat until very hot (about 4–5 minutes). Add 1 teaspoon vegetable oil and swirl to coat. Place patties on the hot surface leaving space between them. Cook undisturbed for 3–4 minutes until a deep brown crust forms on the bottom. Flip once and cook another 2–3 minutes for medium (adjust time ±1 minute for desired doneness). During the last 60 seconds of cooking, place one slice of American cheese on each patty and cover the pan for about 30–60 seconds to melt the cheese.

    Prepare buns

    While the patties rest, split the buns and spread softened butter evenly on cut sides. Place buttered cut sides down on a clean skillet or griddle set over medium heat. Toast until golden brown and slightly crisp, about 1–2 minutes. If using sesame seeds, sprinkle them on the buttered cut side before toasting.

    Spread condiments

    On the bottom half of each toasted bun, spread about 1/2 tablespoon mayonnaise, 1 tablespoon ketchup, and 1/2 tablespoon mustard (adjust to taste).

    Layer toppings

    Place a leaf of iceberg lettuce on each dressed bottom bun, then add two tomato slices, two red onion slices, and two dill pickle slices. If you prefer fewer layers, place toppings in your preferred order.

    Finish burger

    Place the cheeseburger patty on top of the toppings. Top with the toasted bun top and press gently. Let the assembled burger rest 1 minute before serving so juices redistribute.

    Serve immediately with fries or chips. Offer extra ketchup, mustard or hot sauce on the side.
