Classic Bellini Top (choose this OR Wildberry Slush)

Base Cocktail

    Build the base

    Fill a highball glass with ice (about 1 cup). Pour 2 oz Raspberry Smirnoff vodka over the ice, add 0.5 oz fresh lime juice and 0.25 oz simple syrup if you prefer a touch sweeter. Top with 4 oz chilled soda water. Stir gently once to combine.

    Taste the base and adjust sweetness by adding up to an additional 0.25 oz simple syrup if desired.

Classic Bellini Top (if chosen)

    Assemble Classic Bellini top

    Spoon 1 oz peach purée/nectar gently over the back of a spoon so it layers on the soda surface. Slowly pour 1.5 oz chilled Prosecco into the glass so it blends lightly with the peach layer, creating a fizzy bellini float. Do not stir vigorously; let the layers mingle.

Wildberry Slush Top (if chosen)

    Make the wildberry slush

    In a small blender or mini-chopper, combine 0.5 cup frozen mixed berries, 0.5 tbs simple syrup (or agave) and 1 tbsp cold water or soda. Pulse briefly until a coarse slush forms — avoid over-blending to retain texture. Spoon the slush on top of the built vodka & soda, mounding gently.

    If slush is too thick, add an extra teaspoon of water or soda and pulse once more.

Garnish & Finish

    Garnish with 3 fresh raspberries skewered on a cocktail pick and a lime wheel on the rim. Optionally add a sprig of mint for aroma. Serve immediately with a straw/stirrer so the guest can mix the top into the drink.
