Brew the tea
Bring 480 ml of water to a near boil (about 95°C / 203°F). Place 2 tsp black tea leaves (or 2 strong black tea bags) into a teapot or heatproof pitcher. Pour the hot water over the tea and steep for 4 minutes for full-bodied flavor. If you prefer stronger, steep up to 5 minutes but avoid oversteeping to prevent bitterness.

Infuse citrus and sweeten
While the tea is steeping, in a small bowl combine 2 tablespoons honey and 30 ml fresh lemon juice. Stir until the honey dissolves. Add 1 tsp orange zest to the honey-lemon mixture and mix. After the tea has steeped, strain out the tea leaves (or remove tea bags) and stir the honey-lemon-orange mixture into the hot tea until fully dissolved.

Add ginger, mint and cinnamon
Add the 15 g thinly sliced fresh ginger and 6 fresh mint leaves to the hot sweetened tea. Sprinkle in 1 tsp ground cinnamon. Cover the pot and let the mixture steep for an additional 5 minutes so the ginger, mint and cinnamon infuse their flavors. Taste and adjust: add a little more honey if you want sweeter, or another 5 ml lemon juice for brighter acidity.

For a hot serving: Strain the tea into two mugs, discard solids, and garnish each mug with a lemon slice or mint sprig. For an iced version: Let the tea cool slightly (10–15 minutes), then fill two glasses with about 1 cup ice divided between them. Pour the tea over the ice and garnish with lemon slices or mint sprigs.
