    Whisk eggs

    In a medium bowl, crack the 6 eggs and add 1/4 cup whole milk, 1/2 tsp salt, and 1/4 tsp black pepper. Whisk until well combined and slightly frothy.

    Heat 1 tablespoon unsalted butter in a nonstick skillet over medium-low heat. Pour in the egg mixture and cook gently, stirring frequently with a silicone spatula, until soft-scrambled and just set (about 4–6 minutes). Remove from heat and keep warm.

    Cook bacon

    While whisking eggs or beforehand, cook 6 slices of bacon in a large skillet over medium heat until crisp (about 8–10 minutes), turning occasionally. Transfer to a paper towel-lined plate and drain. When cool enough to handle, chop into 1-inch pieces.

    Cook sausage

    In the same skillet, remove excess bacon fat leaving about 1 tablespoon (or use 1 tbsp olive oil). Add 4 breakfast sausage links or patties and cook over medium heat until browned and cooked through (about 8 minutes). Remove, slice or crumble into bite-size pieces, and set aside.

    Sauté veggies

    Using the same skillet, add 1 tablespoon olive oil if needed and return to medium heat. Add 1/2 cup diced red bell pepper and 1/4 cup diced yellow onion; season with 1/4 tsp salt and 1/4 tsp black pepper. Sauté until softened and slightly caramelized, about 4–5 minutes. Add 1 cup baby spinach and cook until wilted, about 1 minute. Stir in chopped bacon and cooked sausage to combine, then remove from heat.

    Prepare spread

    Spread 1/2 tablespoon of softened cream cheese onto the center of each large tortilla (reserve remaining for another use). If desired, drizzle about 1/2 teaspoon hot sauce or spoon 1/2 teaspoon salsa over the cream cheese for a touch of heat.

    Assemble cheese

    Sprinkle 1/4 cup shredded cheddar cheese onto the cream cheese layer on each tortilla (total about 1 cup cheese divided among 4 wraps).

    Assemble wraps

    Divide the scrambled eggs evenly among the four tortillas, placing the eggs on top of the cheese layer. Top each with an equal portion of the bacon/sausage/veggie mixture and a sprinkle of fresh chives if using.

    Fold and toast

    Fold the sides of each tortilla in, then roll tightly from one end to the other to form a burrito-style wrap. Heat a clean skillet or griddle over medium heat and lightly brush or spray with oil. Place wraps seam-side down and toast 2–3 minutes per side until golden brown and cheese is melted, pressing gently with a spatula.
