    Prepare bread and cheese

    Lay the two slices of bread on a clean work surface. Place the sliced or shredded mild cheddar evenly on one slice, covering most of the surface but leaving a small margin at the edges to reduce cheese melt-out. If using American cheese, place the slice on top of or under the cheddar for extra meltiness.

    Butter the bread

    Spread about 1/2 tablespoon of the unsalted butter evenly on the outside face of each slice of bread (the sides that will touch the pan). If working with very young children, an adult should do the buttering. The buttered sides will become the golden exterior.

    Assemble

    Place the cheese-topped bread slice butter-side down in your hand or on the work surface, then top with the second slice of bread with the buttered side facing up. Press lightly to seal the sandwich.

    Heat pan

    Place a nonstick or heavy skillet over low to medium-low heat. Allow it to warm for 1–2 minutes. For very sticky pans, lightly coat the pan with the nonstick cooking spray or the remaining small knob of butter (about 1/2 tsp).

    Cook sandwich

    Put the assembled sandwich in the preheated pan. Cook for 3–4 minutes on the first side without pressing so the bread browns slowly and the cheese begins to melt. Check the underside after 3 minutes — it should be golden brown. Carefully flip the sandwich with a spatula and cook the second side another 2–3 minutes until golden and the cheese is fully melted. If the bread is browning too quickly before the cheese melts, lower the heat and cover the pan loosely with a lid for 1–2 minutes to trap heat and encourage even melting.

    Rest and serve

    Remove the sandwich from the pan and place on a cutting board. Let it rest for 1 minute (this helps the cheese set slightly and reduces hot spots). Cut the sandwich into halves or fun shapes (triangles, stars with a cookie cutter) appropriate for a child. Serve warm with optional ketchup or apple slices on the side.
