Mix
In a medium bowl combine 1 lb ground beef, 1/4 cup fine breadcrumbs, 2 tbsp milk, 1 large egg, 1/2 tsp salt, 1/4 tsp black pepper and 1/4 tsp onion powder. Gently mix with clean hands or a fork until just combined — avoid overworking to keep patties tender.

Shape
Divide the mixture into 4 equal portions (about 4 oz each). Gently form each portion into a round patty about 3 to 3.5 inches wide and about 1/2 inch thick. Press a shallow dimple in the center of each patty with your thumb to prevent bulging while cooking.

Cook
Heat a large skillet or griddle over medium heat and add 1 tbsp vegetable oil, spreading to coat. When oil shimmers, add patties leaving space between them. Cook 3 to 4 minutes on the first side without pressing. Flip and cook another 2 to 3 minutes for a juicy medium (cook longer if you prefer well done). During the last minute, place 1 slice cheese on each patty, cover the pan with a lid briefly to melt the cheese (about 30–60 seconds).

Prepare Toppings
Lay out 4 small lettuce leaves, slice half a tomato into thin rounds if using, and set out pickle slices. Portion ketchup and mayonnaise (1 tsp ketchup and 1 tsp mayo per bun) so children can request their preference.

Assemble
Place a buttered and toasted bottom bun on a plate, add a lettuce leaf, then the cheesy patty, top with 2 pickle slices and a tomato slice if using. Spread ketchup and/or mayonnaise on the top bun and close the burger. Repeat for remaining burgers.
