Trim and marinate
Pat the chicken tenders dry with paper towels. In a bowl or zip-top bag, combine buttermilk, salt, black pepper, garlic powder and optional hot sauce. Add the tenders, coat well, cover or seal, and refrigerate for at least 30 minutes and up to 4 hours. The buttermilk tenderizes and adds flavor.

Prepare breading station
In a shallow dish combine the flour, cornstarch, paprika, onion powder, cayenne (if using), kosher salt and black pepper. Whisk to evenly distribute spices.

Make egg wash
In a separate shallow bowl, beat the eggs with 2 tablespoons milk or water until smooth.
Dredge & Double-coat

Working with one piece at a time, remove a tender from the buttermilk, letting excess drip back into the bowl. Dredge it in the seasoned flour mixture, pressing the flour onto the surface so it adheres. Shake off excess, dip into the egg wash, then return to the flour mixture for a second coating. Place coated tenders on a wire rack for 10 minutes to set — this helps the crust cling and creates extra crispiness.

Heat oil
In a heavy skillet or Dutch oven, add about 1 to 1 1/2 cups vegetable oil (enough to reach roughly 1/2 to 1 inch depth). Heat over medium-high until oil reaches 350°F (175°C) or a piece of bread sizzles and browns in about 45–60 seconds. If you don't have a thermometer, maintain a steady medium-high heat and adjust as needed to keep frying temperature.

Fry tenders
Fry the tenders in batches without crowding the pan (usually 3–4 at a time depending on pan size). Cook 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Use tongs to turn once. Adjust heat to maintain a steady sizzle — lower if crust is browning too fast, raise if oil stops bubbling.

Drain and rest
Transfer cooked tenders to a wire rack set over a baking sheet or to a plate lined with paper towels to drain for 2–3 minutes. Sprinkle with a light pinch of salt while still hot. Let rest 2–3 minutes before serving so juices redistribute and crust firms up.
