Press and cut tofu
Remove the extra-firm tofu from its package and drain. Wrap tofu in a clean kitchen towel or paper towels and press with a weight (a heavy skillet or a few cans) for 15–30 minutes to remove excess moisture. After pressing, cut tofu into 1-inch cubes (about 24–28 pieces).

Marinate
In a shallow bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and maple syrup or honey. Add the tofu cubes and gently toss to coat. Let marinate 10–15 minutes, turning once so all sides absorb flavor. Do not marinate longer than 30 minutes for extra-firm tofu to prevent breakdown.

While tofu marinates, combine cornstarch, all-purpose flour, salt, black pepper, and optional chili powder in a shallow dish or bowl. Shake or stir to make a uniform dry coating. Transfer marinated tofu to a plate lined with paper towels and lightly blot excess marinade—coating sticks best when tofu is damp but not dripping.

Dredge each tofu cube in the dry coating, pressing gently so the cornstarch mixture adheres to all sides. Place coated cubes on a wire rack set over a baking sheet to keep them from getting soggy before frying.

Pour neutral oil into a high-sided skillet or medium saucepan to a depth of about 1/2 inch (roughly 1 cup). Heat over medium-high until the oil reaches 350°F (175°C) or a small breadcrumb sizzles immediately when dropped in. If you don't have a thermometer, test with a wooden chopstick: steady bubbling should form around it.

Fry the coated tofu in batches to avoid crowding—about 6–8 cubes per batch depending on pan size. Carefully add cubes and fry, turning occasionally, until golden brown and crisp on all sides, about 3–5 minutes per batch. Use a slotted spoon or tongs to transfer fried tofu to a paper towel-lined plate or wire rack to drain. Repeat with remaining tofu, adjusting heat to maintain oil temperature (350°F).

When all tofu is fried, you can keep pieces warm on a baking sheet in a 200°F (95°C) oven for up to 20 minutes while you prepare the sauce and garnish.

Make the dipping or glazing sauce by whisking hoisin sauce, chili garlic sauce, lime juice, and 1 teaspoon of water in a small bowl until smooth. Taste and adjust: add more chili garlic sauce for heat, or a little more lime for brightness.

To serve as a tossed appetizer: place fried tofu in a bowl, drizzle 1–2 tablespoons of the sauce over the tofu, and gently toss so pieces are lightly coated. Sprinkle with sesame seeds and sliced scallions. For a dipping presentation, arrange tofu on a platter with the sauce in a small bowl alongside, and garnish the tofu with sesame seeds and scallions.
