Make the rub
In a small bowl combine paprika, onion powder, garlic powder, dried oregano, dried thyme, cayenne pepper, black pepper, kosher salt and brown sugar (if using). Whisk or stir thoroughly until evenly blended. Set aside.

Prep chicken
Pat the chicken thighs dry with paper towels. Drizzle with olive oil and rub to coat evenly. Sprinkle and firmly rub 2/3 of the prepared Cajun dry rub over all sides of the thighs, pressing so it adheres. Let sit at room temperature for 20 minutes or refrigerate up to 4 hours (bring to room temp 20–30 minutes before cooking).

Cook chicken (oven method)
Preheat oven to 425°F (220°C). Arrange thighs skin-side up on a rimmed baking sheet or shallow roasting pan lined with foil and a rack if available. Roast for 25–30 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C) and skin is crisp. For extra char, place under broiler 1–2 minutes watching carefully.

Cook chicken (grill method)
Preheat grill to medium-high (about 400°F / 200°C) with a two-zone setup if possible. Place thighs skin-side down over direct heat for 4–6 minutes to render skin and create char, then move to indirect heat and continue cooking covered for 12–18 minutes, flipping once, until internal temperature reaches 165°F (74°C).

Prep ribs
Preheat oven to 275°F (135°C) for low-and-slow oven braise, or preheat grill for indirect low heat (275–300°F / 135–150°C). Remove membrane from the bone side of the ribs: slide a knife under the membrane at one end, loosen and pull off using a paper towel for grip. Lightly brush meat side with yellow mustard — this helps the rub adhere.

Apply rub
Liberally coat both sides of the ribs with the remaining 1/3 of the Cajun rub, pressing it into the meat. Let sit 15–30 minutes at room temperature to allow flavors to penetrate, or refrigerate up to overnight (bring to room temp before cooking).

Braise (oven)
For tender ribs, place ribs meat-side up on a foil-lined baking sheet or in a shallow roasting pan. Pour apple cider vinegar and water into the pan (they'll steam and keep ribs moist). Tightly cover with foil and bake for 2½–3 hours, or until ribs are tender when pierced with a knife and the meat pulls back from the bones ~1/4 inch.

Low-and-slow grill/smoke (alternative)
If using a smoker or grill, set up for indirect heat at 225–275°F (107–135°C) with wood chips if desired. Place ribs bone-side down and smoke/indirect grill for 3–4 hours until tender, spritzing occasionally with apple cider vinegar or a 1:1 water mixture to maintain moisture.
