Sausage Patties

    Mix sausage

    Place the ground pork in a medium bowl. Add salt, black pepper, brown sugar, dried sage, dried thyme, garlic powder, onion powder and red pepper flakes (if using). Mix with your hands or a fork until just combined — avoid overworking which makes patties tough.

    Form patties

    Divide the mixture into 4 equal portions (about 4 oz / 115 g each). Shape each portion into a round patty roughly the diameter of your English muffins and about 1/2 inch thick. Press a slight dimple in the center of each patty so they cook flat.

    Cook patties

    Heat a large skillet or griddle over medium heat and add 1 tablespoon oil or butter. When hot, add the patties leaving space between them. Cook for 4–5 minutes on the first side until well browned, then flip and cook 3–4 minutes more until internal temperature reaches 160°F (71°C). Remove patties to a plate and tent with foil to keep warm.

    Toast muffins

    Split the English muffins or buns and spread each cut surface lightly with butter. Place cut-side down on a skillet or under a broiler until golden and crisp, about 2–3 minutes on the skillet or 1–2 minutes under a hot broiler. Remove and keep warm.

    Cook eggs

    In a nonstick skillet over medium-low heat, melt a little butter or spray with oil. For folded-style sandwich eggs: beat the 4 eggs with 1/2 tsp salt and 1/4 tsp pepper. Pour eggs into the skillet and cook slowly, stirring gently until softly set but not dry (about 2–3 minutes). Alternately, use an egg ring to cook one egg per sandwich: crack an egg into a greased ring over medium-low heat and cook until whites set, flipping briefly if you prefer over-easy. Make 4 egg portions.

    Melt cheese on sausage

    Return the skillet to low heat, place one cheese slice over each warm sausage patty and cover briefly (30–45 seconds) until the cheese softens and melts.

    Assemble sandwiches

    Spread mayo or butter on the bottom halves of the toasted muffins (if using). Place a lettuce leaf (if using) on the bottom, then the cheese-topped sausage patty, then the cooked egg, and top with a tomato slice if desired. Close with the top muffin half. Repeat for remaining sandwiches.

    Slice sandwiches in half if desired and serve immediately with hot sauce on the side. Leftover patties can be refrigerated for up to 3 days or frozen for up to 3 months.
