Burger Patties

Mix and shape
Place the ground beef in a medium bowl. Add kosher salt, black pepper, and Worcestershire sauce. Gently mix with your hands or a fork until just combined (do not overwork). Divide into two equal portions and form into patties about 3/4 inch thick and slightly wider than your buns; make a shallow dimple in the center of each patty with your thumb to reduce doming while cooking.

Heat a large skillet or cast-iron pan over medium-high heat and add 1 tablespoon vegetable oil. When the oil is shimmering, add the patties (do not overcrowd). Cook without moving for 3-4 minutes until a good crust forms. Flip and cook 2-3 more minutes for medium (adjust for preferred doneness). In the last 60 seconds of cooking, place a slice of American cheese on each patty and cover the pan briefly to melt the cheese. Transfer patties to a plate and tent with foil to rest 3-5 minutes.

Prepare eggs
While the patties cook, melt 1 tablespoon unsalted butter in a separate medium nonstick skillet over medium heat. For a classic folded fried egg: crack two eggs into the pan, season with 1/8 tsp black pepper and 1/8 tsp salt, cook until whites are mostly set, then gently fold or flip to finish to desired doneness (sunny-side or over-easy recommended). Repeat in the same pan for the second two eggs (or cook simultaneously if your pan is large). For a sandwich-style egg that fits the bun, you can use a round ring or ramekin to cook the eggs to the bun diameter.

Make sauce
In a small bowl, mix 2 tablespoons mayonnaise with 1 teaspoon Dijon mustard (and 1 teaspoon hot sauce if using). Taste and adjust seasoning; set aside.

Assemble burgers
Spread a tablespoon of the sauce on the bottom half of each toasted bun. Place a small handful of spinach or lettuce, then the cheeseburger patty (cheese side up). Top each patty with two eggs (one folded/finished egg per burger). Add sliced tomato, a few rings of red onion, and pickles if using. Spread remaining sauce on the top bun and place on top. If using bacon, layer 2 slices on each patty before the eggs.
