Prepare mixture
In a large bowl combine ground chicken, finely diced yellow onion, minced garlic, chopped parsley, breadcrumbs, egg, Dijon mustard, Worcestershire sauce, smoked paprika, kosher salt, and black pepper. Mix gently with your hands or a fork until just combined—avoid overworking which makes patties dense.

Form patties
Divide the mixture into 4 equal portions (about 4 ounces/115 g each). Shape each portion into a round patty about 3/4" thick and slightly wider than your buns; press a shallow dimple in the center of each patty to keep it from puffing while cooking.

Chill (optional)
Place the formed patties on a plate, cover, and refrigerate for 15–30 minutes to firm up. This helps them hold shape while cooking.

Cook patties
Heat a large skillet or griddle over medium-high heat and add 1 tablespoon olive oil. When shimmering, add patties (do not overcrowd). Cook 4–5 minutes on the first side until golden-brown and a crust forms. Flip and top each patty with a slice of cheese; cook an additional 3–4 minutes until internal temperature reaches 165°F (74°C). If using a grill, cook over medium heat for similar times and close the lid for the last 1–2 minutes to melt cheese.

While patties chill or cook, make the sauce. In a small bowl whisk together mayonnaise, ketchup, dill pickle relish, apple cider vinegar, hot sauce (if using), and a pinch of black pepper. Taste and adjust seasoning—add more vinegar for tang, more relish for sweetness/texture, or more hot sauce for heat. Refrigerate until assembly.

Assemble burgers: Spread about 1 tablespoon of the burger sauce on the bottom bun. Place a lettuce leaf, then the hot chicken patty with melted cheese. Top with 2 pickle slices, a few tomato slices, and a few rings of red onion. Spread a little sauce on the top bun and close the burger.
