    Combine grains

    In a medium saucepan, combine rolled oats, steel-cut oats, quick-cooking oats, oat groats (or chosen alternative grain) and millet flakes. Stir to mix the different grain sizes evenly.

    Add liquids and salt

    Add 2 cups water, 1/2 cup milk and 1/4 teaspoon salt to the pan. Stir to combine.

    Cook the oats

    Bring the mixture to a gentle boil over medium-high heat, stirring occasionally. Once boiling, reduce heat to a low simmer. Cover partially and simmer for 10–18 minutes, stirring every 2–3 minutes to prevent sticking. (Because the blend contains both quick and steel-cut oats, cook time balances — aim for about 12–15 minutes for a creamy texture with slight bite from the steel-cut oats. If you prefer softer texture, simmer up to 18 minutes adding a splash of water or milk as needed.)

    Finish base

    When the mixture is creamy and all grains are tender, stir in 1/2 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, 2 tablespoons brown sugar and 1 tablespoon maple syrup (if using). Stir in 1 teaspoon butter or coconut oil if desired for richness. Taste and adjust sweetness or salt.

Mixed Fruit Topping

    Prepare fresh fruit

    While the oats cook, place the quartered strawberries, blueberries, sliced banana and diced apple in a small bowl. Add 1/2 teaspoon lemon juice and gently toss to coat (this prevents browning and brightens flavor).

    Warm or macerate fruit (optional)

    For a softer, saucier topping: in a small saucepan, combine the strawberries, a tablespoon of water and 1 tablespoon brown sugar. Cook over low heat for 3–4 minutes until slightly softened, then stir in blueberries and cook 1 minute more. Alternatively, for a fresh topping, skip cooking — the tossed fresh fruit and dried cranberries are ready to serve.

    Add dried fruit

    Stir 2 tablespoons dried cranberries (or raisins) into the fresh or warmed fruit mixture so they rehydrate slightly and distribute flavor.

Assemble & Serve

    Divide the cooked oatmeal between two bowls (about 1 cup oatmeal per serving). Spoon the mixed fruit topping over each bowl.

    Sprinkle 2 tablespoons chopped toasted nuts and 1 tablespoon chia or flaxseed over each bowl for texture and extra nutrition.

    If you like a looser consistency, drizzle 1 tablespoon extra milk over each bowl. Add an additional drizzle of maple syrup or a pinch more brown sugar to taste.
