Prepare glass

Chill a rocks glass by filling it with ice and set aside while you mix the cocktail.

Combine ingredients

In a cocktail shaker, add 15 ml dark spiced rum extract, 7.5 ml bourbon extract, 22.5 ml fresh lime juice, 15 ml simple syrup, 15 ml Wellesley pumpkin liqueur (or pumpkin syrup), and 2 dashes Angostura bitters.

Add ice and shake

Fill the shaker with ice (enough to about three-quarters full). Secure the lid and shake vigorously for 12–15 seconds until the shaker exterior is very cold and the mixture is well-chilled and slightly diluted.

Prepare glass for serving

Discard the ice used to chill the glass and add fresh large ice cube(s) or fresh ice to the glass.

Strain

Double-strain the shaken cocktail into the prepared rocks glass over the fresh ice. If you prefer a lighter fizzy finish, top with 30 ml club soda.

Finish with bitters

If you didn’t already add Angostura before shaking (optional technique), add 1–2 dashes on top of the drink now to lift aromatics.

Garnish

Garnish the cocktail with a lime wheel on the rim. Sprinkle 1 tsp toasted pumpkin seeds on top of the ice or on the lime wheel for a playful textural note.

Optionally grate a small amount (a light dusting) of fresh nutmeg over the surface for warm spice aroma.
