    Prepare Potatoes

    Wash and peel the potatoes. Using a mandoline or a sharp knife, slice the potatoes very thinly (about 1/8 inch thick).

    Soak the Potatoes

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

    Dry the Potatoes

    Drain the potato slices and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Working in batches, carefully add the potato slices to the hot oil. Fry until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Use a slotted spoon to remove the chips from the oil and drain on paper towels. While still hot, sprinkle with salt, paprika, garlic powder, and black pepper.
