Cook the Steak
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the ribeye steak with salt and black pepper, then sear it in the skillet for about 4-5 minutes per side, or until it reaches your desired doneness. Remove and let it rest before slicing it thinly.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper, onion, and mushrooms. Sauté until they are soft and slightly caramelized, about 5-7 minutes.

Assemble the Sandwich
Preheat the oven to 350°F (175°C). Cut the submarine rolls open and layer the sliced steak, sautéed vegetables, and provolone cheese on top. Place the sandwiches on a baking sheet.

Melt the Cheese
Bake the sandwiches in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly.
