Preheat and prepare

Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or lightly oil a skillet if pan-frying. Split the mini slider buns horizontally and set aside.

Slice the Spam into twelve 1/4-inch to 1/2-inch thick slices (about 12 slices from a 12-oz can). Pat slices dry with paper towel to remove excess moisture.

Cook Spam & Make Glaze

Heat a large skillet over medium-high heat. Add 1 tablespoon of butter to the skillet. When butter is melted and bubbling, add Spam slices in a single layer (work in batches if needed). Cook 2–3 minutes per side, until golden brown and caramelized. Transfer cooked slices to a plate and keep warm.

In the same skillet (wipe excess fat if very smoky, leave a little for flavor), reduce heat to medium. Add soy sauce, brown sugar, pineapple juice, rice vinegar, and sriracha (if using). Stir and cook 1–2 minutes until the sugar dissolves and the mixture thickens slightly into a glaze.

Return the browned Spam slices to the skillet and spoon glaze over them to coat evenly. Cook 30–60 seconds more so glaze clings to the Spam. Remove from heat.

Assemble Sliders

Mix the sauce: in a small bowl combine mayonnaise, ketchup, yellow mustard, lemon juice, and black pepper. Taste and adjust seasoning to preference.

Butter the cut sides of the slider buns with the remaining 1 tablespoon butter (softened). Place bottom halves of buns on a baking sheet or an oven-safe platter if you plan to melt the cheese in the oven.

Place one glazed Spam slice on each bottom bun. Fold a half slice of cheddar (cut slices in half) over the Spam or place a whole small slice if using thin cheddar. Add one dill pickle slice on top of the cheese.

If you prefer melted cheese, place assembled bottoms under the oven broiler or in the preheated oven for 1–2 minutes, watching closely until cheese just melts. Remove from oven.

Spread about 1/2 teaspoon of the prepared sauce on each top bun and place on the sliders.

Finish & Serve

Sprinkle sliced green onions and sesame seeds over the assembled sliders for garnish. If serving family-style, skewer pairs of sliders with small toothpicks to hold together.

Serve immediately while warm. Estimated serving: 12 slider bites (about 2–3 sliders per person as an appetizer).
