Swordfish and Marinade
Cut and pat dry
Trim any sinew from the swordfish if present. Cut the swordfish into 1-inch cubes. Pat the cubes dry thoroughly with paper towels to remove excess moisture—this helps the breading stick and promotes crisping.
In a bowl, combine 2 tablespoons olive oil, 1 tablespoon lemon juice, 2 teaspoons minced garlic, 2 tablespoons chopped parsley, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Add the swordfish cubes and toss gently to coat. Let marinate for 10–15 minutes at room temperature (no longer than 30 minutes) to avoid breaking down the fish.
Breading
Set up a three-station breading line: station 1 — flour/cornstarch mix; station 2 — egg wash; station 3 — breadcrumb mix. In a shallow bowl, whisk together 3 tablespoons flour and 2 tablespoons cornstarch until smooth.
In a second shallow bowl, beat 1 large egg with 2 tablespoons milk until homogeneous.
In a third shallow bowl, combine 3 tablespoons fine breadcrumbs, 1 tablespoon grated Parmesan (optional), 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper; mix well.
Working in a single layer to avoid clumping, remove marinated swordfish pieces a few at a time. Dredge each cube first in the flour/cornstarch mixture, shaking off excess, then dip in the egg wash, letting excess drip back into the bowl, and finally press into the breadcrumb mixture to coat on all sides. Place coated pieces on a wire rack set over a sheet pan. Repeat until all pieces are breaded.
For extra-crispy results: let the breaded cubes rest on the rack for 10 minutes to set the crust before frying.
Frying & Finishing
Pour about 1 cup neutral oil into a heavy skillet (cast iron or stainless) — enough to create a shallow layer about 1/4 to 1/3 inch deep. Heat over medium-high until oil reaches 350°F (175°C) or a small breadcrumb sizzles immediately but not violently when dropped in.
Working in batches (do not crowd the pan), carefully add breaded swordfish cubes in a single layer. Fry 2–3 minutes per side, turning once with tongs, until golden brown and an instant-read thermometer in the center of a thicker piece registers 135–140°F (57–60°C). Thin pieces will cook faster—adjust time accordingly. Total cook time per batch is roughly 4–6 minutes.
Use a slotted spoon or tongs to transfer cooked bites to a paper-towel-lined baking sheet or wire rack to drain excess oil. Keep cooked batches warm in a 200°F (95°C) oven if preparing multiple batches.
Optional Dipping Sauce - Lemon Aioli
While the fish rests or during the last batch, whisk together 1/4 cup mayonnaise, 1/2 teaspoon lemon zest, 1 teaspoon lemon juice, 1/2 teaspoon minced garlic, 1/8 teaspoon salt, and 1/8 teaspoon black pepper until smooth. Taste and adjust acidity or seasoning. Serve alongside the crispy swordfish bites.
