Method
Cocktail
Combine and shake
Fill a cocktail shaker with ice (about 1 cup). Add 2 oz aged rum, 1 oz fresh lime juice, 0.5 oz orange curaçao, 0.5 oz orgeat, and 0.25 oz simple syrup. Secure the shaker lid and shake vigorously for 10–15 seconds until the shaker is very cold and diluted.
Prepare glass
Fill a double old-fashioned glass or tiki mug with crushed ice or fresh ice. Strain the shaken mixture into the prepared glass over the ice.
Float overproof rum
Using the back of a bar spoon, gently pour 0.5 oz overproof rum over the top of the drink so it floats on the surface. If you prefer no float, omit this step.
Garnish & Serve
Garnish with a lime wheel or wedge, a sprig of fresh mint (slap the mint between your palms first to release aroma), and an optional pineapple wedge. Serve with a short straw. Enjoy immediately.
