Chicken Tenders

Prepare the Chicken
Cut the chicken breasts into strips of about 1 inch wide.

Set Up Breading Station
In three separate bowls, place flour in the first bowl, mix cornstarch, salt, black pepper, garlic powder, and paprika in the second bowl, and whisk together eggs and milk in the third bowl.

Bread the Chicken
Dredge each chicken strip in flour, dip in the egg mixture, and then coat with breadcrumbs. Ensure each strip is coated evenly.

Heat the Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the breaded chicken strips to the hot oil, frying in batches to avoid overcrowding. Cook for 4-5 minutes or until golden brown and cooked through.

Drain and Serve
Remove the chicken tenders from the oil and drain on paper towels. Serve hot.
Hand Cut Fries

Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into thin strips, approximately 1/4 inch thick.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Heat the Oil for Frying
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Add the dried potato strips in batches to the hot oil. Fry for about 5-7 minutes until they are golden and crispy. Remove and drain on paper towels.

Season and Serve
Sprinkle the fries with salt while they are still hot. Serve alongside the chicken tenders.
