1. Prepare the Watermelon

Cut the fresh watermelon into cubes. Measure out 2 cups and place the cubes into a blender.

2. Blend the Watermelon

Blend the watermelon on high speed until smooth. If desired, you can strain the mixture through a fine mesh sieve to remove any pulp, but this is optional.

3. Muddle the Mint

In a large glass or cocktail shaker, add the fresh mint leaves. Use a muddler or the back of a spoon to gently press the leaves to release their oils, being careful not to tear them too much.

Fill the glass with ice cubes to chill the drink.

Pour the sparkling water over the mixture in the glass, making sure to leave some space at the top to prevent spilling.
