Mushrooms Preparation

Clean the Mushrooms
Gently wipe the Portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and gills using a spoon to create space for stuffing.

Brush with EVOO
Drizzle 1 tablespoon of extra virgin olive oil over each mushroom and brush to evenly coat. Season with salt and pepper. Set aside.

Prepare the Stuffing
In a mixing bowl, combine the crushed vegetable crackers, minced garlic, chopped spinach, shaved Parmesan cheese, salt, black pepper, and fresh parsley. Mix well until all ingredients are evenly incorporated.

Stuff the Mushrooms
Spoon the stuffing mixture into each mushroom cap, pressing lightly to ensure the stuffing holds together.
Baking

Bake the Stuffed Mushrooms
Preheat the oven to 375°F (190°C). Place the stuffed mushrooms on a baking sheet lined with parchment paper and drizzle with the remaining tablespoon of olive oil. Bake for 20-25 minutes until the mushrooms are tender and the stuffing is golden brown.
