Preparation

    Chop Vegetables

    Slice the bell peppers and onion into thin strips.

    Prepare Sausage

    Use a sharp knife to pierce the sausage links a few times. This helps to prevent them from bursting while cooking.

Cooking

    Cook Sausages

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage links and cook until browned on all sides and cooked through (about 12-15 minutes). Remove and set aside.

    Sauté Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onion, sautéing until they are softened and slightly caramelized (about 8-10 minutes). Season with salt, pepper, and Italian seasoning.

    Combine Ingredients

    Once the vegetables are cooked, return the sausages to the skillet. Pour the marinara sauce over the sausages and vegetables, stirring to combine. Let simmer for 5 minutes.

Assembly

    Prepare Buns

    While the sauce simmers, cut the hoagie rolls lengthwise without cutting all the way through, creating a pocket for the filling.

    Fill Sandwiches

    Spoon the sausage, peppers, and onion mixture into each hoagie roll. Top with shredded mozzarella cheese.

    Melt Cheese

    If desired, place the filled sandwiches under a broiler for 2-3 minutes until the cheese is melted and bubbly.
