Fish Preparation

    Marinate the Fish

    In a bowl, combine olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add the fish fillets to the marinade, ensuring they are well-coated. Let marinate for at least 20 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Grill the marinated fish for about 3-4 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and let rest.

Cabbage Slaw Preparation

    Prepare the Slaw

    In a large bowl, mix together shredded cabbage, shredded carrot, chopped cilantro, lime juice, and salt. Toss until well combined. Set aside to let the flavors meld.

Chipotle Sauce Preparation

    In a blender or food processor, combine Greek yogurt (or sour cream), chipotle peppers, lime juice, garlic powder, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Taco Assembly

    Warm the corn tortillas on a skillet for about 30 seconds on each side. Flake the grilled fish into bite-sized pieces. On each tortilla, add a portion of the fish, followed by a generous amount of cabbage slaw and a drizzle of chipotle sauce. Serve with lime wedges on the side.
