Preparing the Chips

    Cutting the Potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/4 inch wide. Place the cut potatoes in a bowl of cold water to remove excess starch.

    Pre-frying the Chips

    Heat vegetable oil in a large pot or deep fryer to 325°F (160°C). Drain the potatoes from the water and pat them dry with paper towels. Fry the potatoes in batches for about 3-4 minutes until they are soft but not browned. Remove and drain on paper towels.

    Final Frying

    Increase the oil temperature to 375°F (190°C). Fry the pre-cooked chips again in batches for 3-5 minutes until golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt.

Preparing the Fish

    Making the Batter

    In a bowl, mix together the flour, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and has a coating consistency.

    Frying the Fish

    Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying in batches for 4-5 minutes until golden brown. Turn the fish halfway through cooking for even browning. Remove and drain on paper towels.
