Chicken Preparation

Prepare the Chicken
Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, garlic powder, and paprika.

Breading Setup
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, then dip in the beaten eggs, and finally coat with breadcrumbs. Press the breadcrumbs onto the chicken to ensure they stick.

Fry the Chicken
In a large skillet, heat oil over medium-high heat. Once hot, carefully add the breaded chicken breasts and fry for about 6-7 minutes on each side, or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.
Buffalo Sauce

Make the Buffalo Sauce
In a small saucepan over low heat, melt the butter. Once melted, whisk in the hot sauce and garlic powder until well combined. Remove from heat.

Coat the Chicken
Once the chicken is cooked and drained, toss each piece in the Buffalo sauce until well coated.

Prepare the Rolls
Slice the bulky rolls in half and lightly toast them if desired.

Assemble the Sandwiches
On the bottom half of each roll, place a few lettuce leaves, followed by the Buffalo-coated crispy chicken, and top with slices of tomato. Cover with the top half of the roll.

Serve the sandwiches immediately while hot with extra Buffalo sauce on the side if desired.
