Prepare the Haddock
Rinse the fresh haddock fillets under cold water and pat them dry with paper towels.

Bread the Haddock
Coat each haddock fillet first in flour, shaking off excess. Then dip it in the beaten eggs, followed by a coat of breadcrumbs.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Haddock
Carefully add the breaded haddock fillets to the hot oil and fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Tomato
Slice the large tomato into thin rounds.

Assemble the Sandwich
On the bottom half of each burger bun, place a lettuce leaf, followed by a piece of fried haddock, a slice of tomato, and a generous scoop of coleslaw. Top with the other half of the bun.

Serve with Hand-Cut Fries
Serve the sandwiches with a side of crispy hand-cut fries.
