Chicken Cutlet Preparation

Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch.

Set up Breading Station
In three separate shallow dishes, place flour in one, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

Bread the Chicken
Coat each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

Fry the Chicken
Heat olive oil in a large skillet over medium heat. Once hot, fry the breaded chicken cutlets for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Add Tomatoes
Stir in the crushed tomatoes, oregano, salt, pepper, and sugar. Bring to a simmer and cook for about 15-20 minutes, stirring occasionally.

Remove from heat and stir in the chopped fresh basil.
Sandwich Assembly

Assemble the Sandwich
Slice the bulky rolls in half. Place a breaded chicken cutlet on the bottom half of each roll.

Top each cutlet with a generous amount of red sauce and a handful of shredded mozzarella cheese.
