Prepare the Ingredients
Wash and dry the baby field greens thoroughly. Dice the tomatoes and finely chop the red onion. Cook the bacon until crispy, then crumble into pieces. Set aside the crumbled Gorgonzola.

Combine the Salad
In a large salad bowl, add the washed baby field greens, diced tomatoes, chopped red onion, crumbled bacon, and crumbled Gorgonzola. Toss gently to combine all the ingredients.

Make the Balsamic Reduction
In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat, then reduce the heat to low. Allow the mixture to simmer gently for about 15-20 minutes, or until it has thickened and reduced by half. Remove from heat and let it cool slightly.

Drizzle the Reduction
Once the balsamic reduction has cooled, drizzle it over the salad just before serving. Toss the salad again to evenly coat with the balsamic reduction.
