Ribs Preparation

    Preheat the Oven

    Preheat your oven to 325°F (163°C).

    Season the Ribs

    Pat the pork ribs dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Ribs

    In a large oven-safe pot or Dutch oven, heat a little oil over medium-high heat. Sear the ribs on both sides until browned, about 3-4 minutes per side.

    Add Aromatics

    Remove the ribs from the pot and set aside. In the same pot, add minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.

    Deglaze and Braise

    Pour in the apple cider, soy sauce, and brown sugar, stirring to combine. Place the ribs back in the pot, cover, and transfer to the oven. Braise for 2.5 to 3 hours until tender.

Kholrabi Slaw Preparation

    Prepare the Vegetables

    While the ribs are braising, peel and julienne the kohlrabi and carrot. Thinly slice the cabbage.

    Make the Dressing

    In a large bowl, whisk together apple cider vinegar, olive oil, honey, salt, and black pepper.

    Combine Slaw Ingredients

    Add the prepared kohlrabi, carrot, and cabbage to the bowl with the dressing. Toss to combine and let it sit for at least 30 minutes.

Korean BBQ Glaze Preparation

    Mix the Glaze

    In a small bowl, combine gochujang, honey, sesame oil, minced garlic, rice vinegar, and soy sauce. Whisk until smooth.

    Glaze the Ribs

    Once the ribs are tender, remove them from the oven. Brush the Korean BBQ glaze over the ribs generously.

    Finish Under Broiler

    Increase the oven temperature to broil. Return the glazed ribs to the oven and broil for about 5-7 minutes, until caramelized.

    Serve

    Serve the braised ribs on a plate with a side of kohlrabi slaw, garnished with shaved scallions and sprinkle black sesame seeds on top.
