Cocktail Preparation

    Prepare the Glass

    Begin by chilling a cocktail glass by filling it with ice water. Set aside while you prepare the drink.

    Mix the Ingredients

    In a cocktail shaker, combine 2 oz of gin, 1 oz of prickly pear puree, 0.5 oz of fresh lemon juice, and 1 tsp of granulated sugar.

    Add Ice

    Fill the cocktail shaker with ice cubes (approximately 1 cup) to chill the mixture.

    Shake Well

    Secure the lid on the shaker and shake vigorously for about 15 seconds until the mixture is well combined and chilled.

    Strain into Glass

    Empty the ice water from the chilled cocktail glass. Using a fine mesh strainer, pour the mixture from the shaker into the glass to remove any solids.

    Top with Champagne

    Carefully top the strained cocktail with 3 oz of brut champagne, allowing it to mix gently.

    Garnish the cocktail with a lemon wedge and a slice of prickly pear on the rim of the glass.
