    Prepare Potatoes

    Wash the potatoes thoroughly under cold water. Cut them into quarters and place them in a large pot.

    Boil Potatoes

    Fill the pot with enough water to cover the potatoes and add a pinch of salt. Bring the water to a boil over high heat. Once boiling, reduce the heat to medium and let the potatoes cook for about 15-20 minutes or until they are fork-tender.

    Drain and Cool Potatoes

    Once cooked, drain the potatoes in a colander and let them cool for about 10 minutes.

    Chop Vegetables

    While the potatoes are cooling, chop the celery and red onion. Place them in a large mixing bowl.

    Prepare Dressing

    In a separate bowl, mix together the mayonnaise, mustard, salt, black pepper, and paprika until well combined.

    Combine Ingredients

    Once the potatoes are cooled, cut them into bite-sized pieces and add them to the bowl with the celery and red onion. Pour the dressing over the potato mixture.

    Mix Salad

    Gently toss all the ingredients together until the potatoes are well coated with the dressing. Make sure to be gentle to avoid mashing the potatoes.

    Chop fresh parsley and sprinkle over the top of the potato salad for garnish. Serve chilled or at room temperature.
